Spinach spaghetti


There are few ingredients in this simple dish but it makes a satisfying light meal. The nutmeg is optional but it combines well with spinach.



Servings: 1
    
Ingredients 
40 g /1.5 oz spaghetti
1 small bunch spinach, finely chopped
½ an onion, thinly sliced
1 teaspoon olive oil
1 tablespoon finely chopped fresh parsley
Nutmeg, to garnish (optional)
Salt and pepper, to taste

Method
Boil water in a small pan and cook the spaghetti for about 10 mins or until it is cooked but still firm to bite. When cooked, drain and rinse with cold water and keep aside. Meanwhile heat oil in a pan over medium heat and sauté the onion for 2-3 minutes. Add the spinach and cook, stirring constantly, for a few minutes longer until the onion has softened and spinach has wilted. Add the cooked spaghetti and heat through. Season to taste with salt, pepper and, if desired, freshly grated nutmeg.
